Two powerful dairy organizations, The International Dairy Foods Association (IDFA) and the National Milk Producers Federation (NMPF), are petitioning the Food and Drug Administration to allow aspartame and other artificial sweeteners to be added to milk and other dairy products without a label.

On a recent trip to a health food store, I noticed retailers are either improperly stocking their coolers – or catching on to the fact that there has been a boom in consumer demand for live-cultured foods.
Considering that cooler space is at a premium compared to shelf space, I can’t help but think that either the retailer or manufacturer *might* be trying to cash in on this surge of popularity.
Yes, thanks to the Body Ecology Diet, the GAPS Diet, and colourful authors like Sandor Ellix Katz (Wild Fermentation), ferments are very much ‘in vogue’ right now.

Fresh Sardines - Pickled

I finally managed to buy some fresh sardine fillets today. George's Seafood at West End have them in stock along with heaps of other Australian fish. If they don't have the fillets already prepared, they'll fillet while you wait.

I'm making pickled fish by lying the fillets in a dish and covering with lime juice, salted capers and fresh dill. I'll leave on the bench for one day and they'll be ready for eating. No enzymes damaged by heating.  Just before I plate them, I'll add some cultured cream to finish off.

How to culture fresh cream? Just buy, hopefully, unpasteurised organic cream and add a capsule of probiotic, stir through and leave on bench for one day. If you have kefir milk in the fridge, you can add a small amount to the cream and that will innoculate the cream. Healthy bacteria for the gut and easily digestible.

Preparing to make Natto at home

I love natto and I've made it before. This time I'm making with black beans instead of soy beans just for a trial. Also in the past, I've been unable to access the traditional Natto spores from Japan but someone passed on a link for me and it arrived today.

So this is just to show you how tiny the jar and spoon are and I can make 30kg of natto from this tiny amount.

I'll post as I go along and show you how it can be made. Fresh natto is wonderful - an acquired taste to be sure but a wonderfully beneficial fermented food.

Apparently you can also purchase 2 litre jars. I've now tasted Kim Chi, Berry Sauerkraut and Green Sauerkraut and the Kim Chi is my favourite very spicy and tangy..........

Found some Peace, Love and Vegetables raw cultured vegies at Northey St today. The people who carry, raw butter, milk and cream and all other organic products is carrying it now. Their truck was flooded so they had limited supplies today. I bought the kim chi and it's spicy and delicious and $1.00 dearer than Flannery's which is disappointing as the market overheads are much less than Flannery's. Oh well, that's capitalism
